How to get a soft and fluffy texture with homeade bread?

I've been making my own bread lately, but the texture isn't soft and fluffy like store bought bread. Should I knead the dough longer?How to get a soft and fluffy texture with homeade bread?
Being a former chef former Canada a softer loaf is generaly one with or made with milk, it adds a softer texture, fluffiness like store bought bread can be achieved by slow rising of the dough, some professional bakerys make the dough and then raise it slowly in the frig. They do it and let it rest overnight.





The fat to adds texture, most people my use oil, shortening or nothing, but the dough needs some fat to help tenderise the dough, for a real treat warm the milk to blood temparture, add soft butter, sugar and the yeast let it stand to rise, the mix your dough, kneading often if done to much or even in breadmakers can make the dough heavy or tough, a gentle kneading is all you are require to do.





Once you have brought the dough to room temp, and then formed it, into loaves or rolls, let it rise again to a double of it original size, then brush a bit of water on to create a crust, the bake it faster, 400 D,timing depends on the size of the product, this is done so it pushes the dough and seals in the moisture and keeps the dough soft and fluffy.

No don't knead it longer, adding too much flour will make it tough. Just knead till the dough is smooth and elastic. The softer the dough the softer the bread. Having good yeast is also important, make sure your yeast is fresh and not old. That way you get maximum volume for your bread.

A quick suggestion for when it comes out of the oven!





Brush olive oil all over the bread. As long as you keep it sealed, it keeps it soft for a week!





Another thing I do to keep it super soft is to take it out of the pan immediately after baking and put it in a large ziplock bag. This softens the bread as it cools due to the consensation!

after you knead it, let the dough rest til doubled the size, knead it again shape it and let rise til dooubled, than bake it, it should work like that, it come out light and fluffy,good luck and enjoy
