When you bake cookies how do you make the dough the correct texture?

I am trying to get the dough the right consistency. Either it is too dry and the components are not well mixed or the dough is too gooey and I can not use the cookie cutter.

How do I get the dough so it is easy for me to use the cookie cutter? When you bake cookies how do you make the dough the correct texture?
Be sure that the dough is well chilled; that does affect the consistency and if yours is too gooey it might just be too warm. You really can't take a shortcut there -- if your recipes says you need to chill two hours, four hours, etc., you can't skip that step. When you bake cookies how do you make the dough the correct texture?
CUT OUT COOKIE DOUGH

1/2 c. soft butter

1 c. sugar

2 eggs

2 tbsp. cream or milk

1 tsp. vanilla

2 1/2 c. flour

1/2 tsp. salt

1/4 tsp. soda

Mix well butter, sugar and eggs, Stir in cream and vanilla. Sift together and stir in dry ingredients. Chill dough 4 to 5 hours or overnight. Heat oven to 400 degrees. Roll out dough a little at a time (keeping rest chilled) on well floured board. Bake 6 to 8 minutes on ungreased baking sheet. Let stand a minute before removing from baking sheet.
Rolling it in flour helps...did you follow the recipe correctly? Because adding just a little too much of one ingrediant will throw your mixture all off.
follow the instructions carefully are if they are still not working out i would say the recipe is wonky

.
Baking is a science, unlike cooking where you can throw in a little bit of this and a little bit of that . The most important thing is to follow the directions to a ';T';. The flour amount affects how dry your cookies will be , if the taste doughy or like crackers. The sugar affects the sweetness and the color, the eggs affect the rising ond the consistency. So most baking recipes rely on every ingredient to be exactly the correct percentage to get the best tasting cookie!

So always follow the directions-if it says mix after each addition then mix after each addition, if it says ';stir'; then stir, don't beat it in a mixer.

After doing this your cookies will be better.
first make sure that all your sugars and fats are thoroughly mixed in before u add your flour if the dough is a little sticky then add a little more flour then place the dough in the fridge for about an hour after u remove the dough from the fridge place the dough on a slightly floured surface then roll out with rolling pin to desired thickness, then use your cookie cutters
